Our bistro will welcome you by the pool during the summer with fresh products cooked in all simplicity.

The current events oblige us to reinvent our restaurant around a less sophisticated cuisine, terroir and quality in the respect of our values always under the direction of our star chef Grégory Mirer and his team. We simplify our cooking because of this exceptional situation. We intend to re-open the doors of our gourmet restaurant as soon as possible
Opening hours of our restaurants:
The bistronomique restaurant is open 7 days a week from 12:00 to 1.30 and 7:30 p.m. to 9:30 p.m.
Our bar is open everyday from 10:00 a.m. to midnight
Our breakfast team welcomes you every day from 7:30 a.m. to 10:30 a.m. at the main restaurant
The room service is served everyday from 6 a.m. to 1 a.m.
Bistronomic RestaurantChef Grégory Mirer graduated from the famous "Ecole Supérieure de cuisine française Ferrandi" (Ferrandi Higher Education Establishment specialized in French cuisine) in Paris and was noticed by Joël Robuchon who hires him as an assistant chef de partie at the two-star Michelin restaurant, l'Astor. Still with Joël, Grégory continues with the team that launches the "Atelier de Joël Robuchon".
Then, he will join the 2-star Michelin Hotel Métropole in Monaco as a 1st sous-chef
Later, he will be an assistant chef at the "2-star Michelin" Mirazur Restaurant in Menton for Argentinean chef Mauro Colagreco where Grégory will have a passion for herbs and flowers.
Grégory has been a Michelin-starred chef at Les Bories since 2015.
Chef Grégory Mirer's cuisine is creative. His dishes contribute to the viewing pleasure but also to the flavor's one through the mix of herbs and flowers from the garden.

Our restaurant is open 7 days a week from 12:00 to 1.30 pm and 7.30 till 9.30
BreakfastBreakfast is served in the main restaurant, from 7:30 am to 10:30 am.
Our buffet is offered in the old "borie" (Small round dry-stone hut in the South of France)which was built 2000 years B.C.
You can also have your breakfast with the room service, on the terrace of your room, in a natural and relaxed environment, with an outstanding view.
