The restaurant is open from Wednesday till Saturday from 7:30 p.m. to 9:30 p.m.
The Bistrot restaurant is open from Sunday, Monday and Tuesday from 7:30 p.m. to 9:30 p.m.
The Pool restaurant is openfrom 12:30 p.m. to 2.00 p.m.
Our bar is open everyday from 10:00 a.m. to midnight
Our breakfast team welcomes you every day from 7:30 a.m. to 10:30 a.m. at the main restaurant
The room service is served everyday from 6 a.m. to 1 a.m.
Coming from Champagne, his entourage and his region have passed on to Chef Julien Bontus, the new chef of the Restaurant des Bories, the passion for gastronomy and wine.
With more than 15 years of experience in many starred establishments, he has been marked by the influence of renowned Chefs.
His love for haute cuisine became concrete during his first classes with Jean-Pierre Gillot – 1 Michelin star, and his experience with Patrick Henriroux – 2 Michelin stars, confirmed his choice. In 2016, he joined the teams of Nicolas Davouze – Bocuse d'or France, where he developed his unifying spirit and ambitions.
A true Epicurean, Chef Bontus sums up his cuisine as "instinctive, vegetal and graphic". It offers flavors with unexpected combinations, such as a pigeon served with salsify, lychees and almond milk.

Our buffet is offered in the old "borie" (Small round dry-stone hut in the South of France)which was built 2000 years B.C.
You can also have your breakfast with the room service, on the terrace of your room, in a natural and relaxed environment, with an outstanding view.
